Seaweed Doritos and Uni Guac Are the Nachos of the Sea

Upgrade your chip and dip game with these fry-to-order nautical nachos by chef Nick Erven of LA's Saint Martha.

Remember when you were a kid and you watched The Little Mermaid for the first time (or Splash, for all you ancient people in your 30s), and you wondered what it would be like to live in an undersea kingdom? Sorry for the real talk, but before you could see any signs of a castle or dancing sea life, you would drown after a few minutes of being dragged to your watery grave by a 16-year-old mermaid who has an obvious hoarding problem (or alternatively, a mermaid with the most basic name ever). Then, your bloated blue corpse would likely be eaten by Sebastian because crabs are scavengers and they sweep the sea floor for dead creatures.

Now, let's make some nachos!

MAKE: Uni Tataki with Avocado Mousse, Serrano, Hearts of Palm, and Seaweed Doritos

You've mastered the fine art of queso and now it's time to make something a little more challenging. These chips made from deep-fried seaweed and paired with whipped guacamole topped with torched uni are from chef Nick Erven of LA's Saint Martha. They have an aquatic theme to them, so you can enjoy these on the safety of land and not in the watery death trap those well-intentioned mermaids have set up.

While it seems daunting to make your own chips, here you're simply frying up strips of nori lightly brushed with vinegar and sugar for that extra crispness. The pureed avocado makes for a lighter consistency so that the delicate seaweed chips can support the dip when you scoop.

They're so tasty, the mermaids will want to come ashore to try them even if we fried and ate their friends in fricassee. You'll fall in love, kill a drag queen mega-octopus, and then go out for karaoke before heading back and frying up more chips.
