On a lazy Saturday, why not take a vicarious voyage to the bayou? We've got just the ticket.

New Orleans chef John Besh is the Renaissance man of Louisiana. Beyond his impressive list of restaurants that includes August, Domenica, La Provence, Borgne, Besh Steak, and more, Chef Besh is also an award-winning cookbook author, philanthropist, and television personality. He's also a former Marine, which may be why he's such a resourceful dude.

MAKE IT: John Besh's Trout Amandine

On this episode of VICE Eats, Besh heads out to Lake Pontchartrain—just outside New Orleans city limits—to catch some seafood with local fishing legend "Deadly" Dudley Vandeborre, the fish whisperer of Louisiana, and Brian Landry, co-owner and chef at Borgne. Then it's back to La Provence to cook up the catch, where the former Marine tells the interesting backstory of his favorite childhood dish—trout amandine.

Sure, you might be stuck amongst the car honks and garbage smells of your urban home, but there's nothing wrong with letting your laptop screen take you away to the decidedly chiller vibe of the American South.

Now you can have the Besh of both worlds.
