James Tracey might be the coolest chef we have ever shot for Chef's Night Out. Usually when we first meet up with our host, there's a 30-minute warm-up period, but not with James. Within seconds after we arrived at Craft, we were looking at freshly slaughtered suckling pigs, meeting his all-star butcher, and joking around with his sous-chefs, Melanie and Mac. We were shocked by how relaxed James is, considering he's the executive chef at Craft and Colicchio & Sons. He likes his razor clams raw and his beer cold. He also likes Il Buco Alimentari & Vineria, Motor City, and Paddy Maguire's as after-work drinking destinations. Chef Tracey is the man.
