- In a medium bowl, mix white rice flour, potato starch, cornstarch, salt, pepper, and cayenne.
- Whisk in the sparkling water until mixed and let the batter sit for 15 minutes.
- In a large saucepan, heat vegetable oil to 375°F.
- Dip onion rings in batter. Drop onions in oil and fry until golden, 1 ½ - 2 minutes.
- Serve immediately with your dip of choice.
