Raw Beet, Apple, and Feta Slaw Recipe

For the days when it's just too hot to turn on the oven, turn to this vibrant salad to cool you down and fill you up.

Serves 4-6
Prep time: 25 minutes
Total time: 30 minutes

Ingredients

2 Granny Smith apples (about 12 ounces|345 grams), thinly sliced
2 red beets (about 12 ounces|345 grams), peeled and thinly sliced
4 ounces|115 grams crumbled feta cheese
2 ounces|60 grams shelled pistachios, roughly chopped
3 tablespoons olive oil
2 tablespoons apple cider vinegar
kosher salt and freshly ground black pepper, to taste

Directions

Slice the apples and beets into matchsticks and toss in a bowl with the feta, pistachios, oil, and vinegar and season with salt and pepper. Transfer to a platter and serve.
