-glazed ham might not be the first thing that comes to mind when you think of a succulent Southern ham, but for Edward Lee, the combination is second nature.

Gochujang is a spicy Korean chili sauce that is an umami flavor bomb, and is well-worth any time it may take to hunt it down (which, if there's an Asian grocery store or supermarket with a "world foods" aisle in your city, shouldn't be too long). Lee is a Brooklyn-born, Korean-American veteran of both Top Chef and The Mind of a Chef who is now based in Louisville, Kentucky. This ham is the ultimate expression of his many life experiences; it's a big, beautiful meat roast that is truly unlike any you've ever had before.

Forget honey. Lee glazes his ham not only with the gochujang chili sauce, but also with apple juice, maple syrup, Worcestershire, and a touch of espresso.
