Give Your Grilled Cheese a Facelift with Truffle Paste and Pickled Walnuts

This is the richest, creamiest, ooziest damn grilled cheese ever.

We're at a crossroads, America. We've been divided for too long, tossing blame in every direction. It's time to bridge this divide, and we can start by finding common ground, one thing we on which can all agree: While nobody is perfect, one sandwich is pretty damn close, and that's the grilled cheese.

Even in its humblest form—crappy white bread, American cheese, and a healthy smear of butter—the grilled cheese is the best of the classic American sandwiches. But the best part about a grilled cheese is that it can be whatever you want it to be, like the American Dream itself. Want to add bacon or tomato? Do it. Challah instead of white bread? Great call. Use two or even three kinds of cheese? Go nuts.

Every once in awhile you just want to get a little bit fancier, throw a tie on this blue-collar sandwich, if you will. This cheese and truffle croque is perfect for such an occasion.

RECIPE: Cheese and Truffle Croque

Just swap that American with creamy Turnworth cheese (or Brie or Camembert if you can't find Tunworth), add a generous dose of black truffle paste, toss in some pickled walnuts, and you've got yourself the richest, creamiest, ooziest damn grilled cheese ever.

This recipe comes from two of our favorite London chefs—James Ramsden and Sam Herlihy—and they suggest a wine reduction for dipping, but feel free to keep things relatively low brow and just swap it for mustard. Or, ya know what, just do whatever you want. It's a free country, dammit.
