We have a question for you, and we want you to answer honestly for your own benefit (we couldn't judge you even if we wanted to): when's the last time you ate a salad?

Sure, you probably had tons of veggies on your Christmas plate—and during three days of leftovers—but there's a pretty good chance that most of them were of the root variety. Those parsnips that your Aunt Judy brought to dinner were probably covered in butter.

Well, Christmas is drawing to a close, which means it's time to start making your way to the exit of the carb-and-cheese train that you've been so comfortably riding for the last few days. It's time to eat a salad. This kale and radicchio salad from Greg Denton and Gabrielle Quiñonez Denton of OX in Portland is simple, it's fresh, and it's beautiful. And it's just unhealthy enough to serve as the bridge between this week's gluttony and Monday's bone broth cleanse.

RECIPE: Kale and Radicchio Salad

You're going to need to massage the lemon-miso dressing into the kale (consider it your post-Christmas exercise), then pile on the feta and fresh herbs and greens.
