Putting Miso in Your Cookies Might Be the Best Idea Ever

Yes, you can put whatever the hell you want in cookies and they'll still be delicious.

Winter, it seems, is finally coming. And while we will probably spend the next four months bitching and moaning about everything from the temperature to the heinous mixture of snow and mud covering the ground, you will not hear us complaining about all the delicious ways to warm up: spiked cider, hot pie, and miso, here we come.

Until recently, we believed the only way to warm up with miso was with a bowl of soup or miso ramen, but then we discovered what might just be miso's most comforting use: these brown butter cookies.

We got this recipe from the geniuses at North Bakery in Providence, Rhode Island, who came up with the idea to mix fermented bean paste with flour, sugar, and a shitload of butter to create a cookie that will simultaneously satisfy your sweet tooth, give you a savoury punch, and confirm that you can put whatever the hell you want in cookies and they'll still be delicious.

They're crunchy as hell on the outside, soft on the inside, and have a texture and taste that keeps changing as you chew thanks to the large chunks of white chocolate, crispy rice, and nutty flavour from the browned butter. Make enough of them, and they'll keep you happily gorging until spring comes.
