'Tis the season to roast every damn vegetable we can get our hands on. Of course we're going for squash, pumpkins, and tubers, but we won't stop there. Oh no, we'll roast everything. We're going down a roasting rabbit hole so deep, we've already forgotten what raw produce looks like.

The surprising hero of this oven-abusing bender is an unassuming head of green cabbage. Cut into wedges, oiled up, and cooked hot and fast, this dish puts slaw to shame.

RECIPE: Grilled Cabbage Wedges
