Nothing says "gearing up for Easter" like pulling a thin old bit of rope around a freshly laid egg and giving it a heave. The words "tray bake" usually summon the image of one of those desperate tin squares of joyless brown cake, pulled out of an orange carrier bag under your colleague's desk, just seconds before everyone in the office breaks into a round of "Happy Birthday" beside a stack of photocopier paper and two abandoned keyboards. This, on the other hand, looks delicious.

For those of you lucky enough not to have been raised by the product of 1950s Britain, Simnel cake is an unholy coagulation of marzipan, fruit cake, jam, and butter. Imagine the smell of European shampoo made a solid, diabetic reality. Lovely with a cup of tea.
