Griddled Mortadella & Cheese Recipe

"Because we all get hungry in the middle of the night."

Ingredients

1 large piece focaccia sliced horizontally or two slices of any bread laying around
1 small knob unsalted butter
4 pieces mortadella, thinly sliced or prosciutto, or deli-meat of choice
2 each Babybel cheese rounds, halved horizontally
handful wild arugula
Sriracha, to taste
Kewpie mayonnaise or any mayonnaise, to taste
black pepper, freshly ground
a fried egg (optional)

Directions

1. Slice the focaccia lengthwise and toast it until it's golden brown.

2. Heat a small sauté pan over medium-low heat. Add the butter and melt it until it begins to foam. Add the sliced mortadella (or whatever meat) and warm for just a minute or so.

3. Start to build your sandwich by taking the Babybel slices and laying them on the bread, followed by the warmed mortadella and some wild arugula, for color.

4. Quickly grill the sandwich in the pan to ensure total cheese melt. It needs to ooze out the sides. Add the fried egg at this point if you wish. Finish with a crack of freshly ground black pepper. Enjoy immediately.
