Directions
- In a Vitamix or high-powered blender, combine the coconut milk, dates, and 6 cups water and purée until smooth.
- Transfer the mixture to a large saucepan and bring to a boil. Reduce the heat to maintain a simmer and add in the oats, chia seeds, turmeric, ginger, nutmeg, and cardamom and cook, stirring, until thick, about 40 minutes.
- To serve, divide porridge between bowls and top with applesauce and granola. Enjoy!
