This Chickpea Egusi Stew Won’t Break Your Veganuary Vow

Make a batch of this and you’ll be tempted to carry on into Vegbruary, too.

You've watched Cowspiracy, bought three packets of Quorn veggie sausages, given three packets of Quorn veggie sausages to your housemate because they contain traces of egg, Instagrammed your lentil burger, had an argument with your mum about protein intake, and eaten everything on the Pret menu with a green "V."

One week in and you are totally bossing Veganuary.

But for those who want to take their month-long sojourn into the vegan diet up a notch, may we suggest an entirely plant-based recipe that also happens to be entirely delicious and filling? (No offence, Pret).

RECIPE: Chickpea Egusi

Chickpea egusi is a hearty West African stew made with ground egusi melon seeds, which give a delicious texture and help to thicken the sauce. The Groundnut, an African food collective based in London, roast their egusi seeds for extra crunch, before throwing into the pot with tomatoes, garlic, and onions and adding a whole heap of veggies including spinach and peppers. And of course, the chickpeas.
