Pot Butter Pain Perdu

A savory French toast, complete with pot-infused butter.

"Get high, French-style."

Ingredients

60 g pot butter

8 egg yolks

490 g half and half

15 g sugar

3 g parsley, chopped

3 g thyme, chopped

160 g panko bread crumbs

Directions

1. Melt the butter in a small sauce pan. In a separate pot, scald the half and half.

2. Put the egg yolks in a medium bowl and whisk in the melted butter, then whisk in the half and half. Stir in the sugar and herbs, then add the breadcrumbs and allow the mixture to sit for 30 minutes to absorb.

3. While the mixture is sitting, heat the oven to 350 F. Line a brownie pan with parchment paper, pour in the breadcrumb mixture, and spread it around so that it's even. Cover with foil and bake it for 20 minutes. Rotate the pan and bake it for another 10-15 minutes or until the pain perdu is set.
