Monday may be blue, Tuesday grey, and Wednesday too, but Friday … is curry night.

Something about the start of the weekend just calls out for steaming plastic containers of korma, rogan josh with extra chili, and "accidental" over-orders of peshwari naan.

Not to disrupt your hallowed tradition of unwinding from a busy week with bhaji, but here's a suggestion: tonight, give the Bombay Gardens Deliveroo guy a break and try your hand at making Kolkata's fave street food snack: the kathi roll.

This chili- and onion-stuffed flatbread is a thing of easy, comforting beauty. Basically an Indian take on eggy bread, it's super-simple to make but can be customised with almost any vegetable or protein (hello, end-of-the-week leftovers at the back of your fridge).

No wonder Harneet Baweja of London's acclaimed Indian restaurant Gunpowder describes the kathi roll as the "best stopgap dinner." It could easily become your best Friday night dinner, too.
