His huevos con chorizo, or chorizo fried eggs, are a take on the classic Mexican breakfast dish of eggs and chorizo, beefed up with manzano chili salsa and panela cheese.

RECIPE: Chorizo-Fried Eggs

This recipe is forgiving, and urges you to burn the shit out of part of it.

The pyrotenics begin with making a charred salsa from tomatoes, onions, spicy chorizo—don't skimp on the good stuff—manzano chili, and fresh cilantro. Throw it all together in a blender, watch it all whirl together until it's completely smooth, and set it aside.

Crack some fresh eggs into a piping hot skillet, cook them over easy, and place on a crispy tortilla. Drown the entire thing in that beautiful sauce and top it off with crispy, bubbly panela cheese, and rejoice, because you haven't burned the house down. Thank God your eyebrows still look beautiful.
