These Ultra-Crispy Fritters Are the Best Way to Eat Mussels

It's time for mussels to break out of their shell.

Mussels are the Michael Caine of the shellfish universe. You'll find them listed on the billing, but they're rarely the star of the show. These little mollusks are often overlooked for their sexier family members.

You're not going to find any mussel shacks in a beach town anywhere, nobody's going out for the mussel happy hour after work, and a mussel boil is just not a thing.

But mussels deserve a whole lotta love. They're cheap. They're delicious. They're nearly impossible to screw up. And while they're incredibly versatile, more often than not you'll find them find them served steamed in some sort of broth.
