Servings: 4
Total time: 1 hour

Ingredients

3 cups fresh orange juice
3 cardamom pods
1 ½ cinnamon sticks
3 (4-inch) sprigs fresh rosemary
5 apples, peeled, cored, and chopped into large chunks (about 2 ½ pounds)
4 pears, peeled, cored, and chopped into large chunks (about 2 ½ pounds)

Directions

In a large saucepan, combine the orange juice, cardamom, cinnamon, rosemary, and salt and bring to a boil. Cook until reduced by half, about 8 minutes. Add in the apples and pears and cook, covered, over medium heat and stirring occasionally, until the apples are very tender, about 35 minutes. Uncover and, if necessary, cook until liquid evaporates. Discard the cardamom, cinnamon, and rosemary. Transfer to a food processor and purée until smooth.
