Starting with a puree of raw onions, garlic, ginger and chilies, Matty builds the flavors of his tomato-y sauce low and slow. And those bird’s eye chilies are not for the faint of heart, by the way. “I want the sauce to be just hot enough that I’m sweating,” Matty says. “A little bit of fear. But I can still finish it.” It’s scary good.
