Of all the sauces on Mother Nature's green earth, there is perhaps none greater than Argentina's native green sauce, chimichurri. And not just because you will never eat anything that's more fun to say (seriously, go ahead and say it out loud a few times. Make sure to roll those Rs. How fun was that?), but because it's a garlicky, herby smack of freshness with just the right amount of chili kick. Plus, it's easy AF to make.

If there's anybody that knows their meat it's the Argentinians, and they'll put this perfect meat compliment on just about anything that comes off the grill. You could take the world's toughest skirt steak, throw some chimi on it, and it would still be delicious. Or at least sufficiently masked.

But why would you be eating the world's toughest skirt steak when you can cook up a juicy, flavorful, bone-in prime rib that not only serves as the perfect bed for a blanket of chimichurri, but also happens to be one of the easiest things you will ever cook? Just rub it with a generous amount of salt and pepper, let it rest in the fridge overnight, then throw in the oven to cook for 3 to 4 hours.
