Green Chorizo Makes This Torta Legendary

When Barack Obama visited the Mexican city of Toluca for the North American Leaders Summit in 2014, he was bummed that he missed out on the area's "legendary" local chorizo.

And the top of that heap, is, by most accounts, from La Vaquita Negra del Portal, a family-run deli in Toluca that's been around for almost a century. It might be tempting to think of their green chorizo torta as a "border-style Hamburger Helper," but it's so much more.

The meat here gets its color from the chopped tomatillo and cilantro used to season the meat, while the crema and queso blanco mellow everything out in this perfect sandwich.
