Vegan Chocolate Cookies

These are so good, it's hard to believe they're vegan.

Ingredients
10 1/2 ounces all-purpose flour
4 ounces cocoa powder
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 cups granulated sugar
1 cup vegetable oil
1/2 cup soy milk
2 teaspoons vanilla extract

Directions

1. Heat oven to 325°F|165°C.

2. In a medium bowl, combine the flour, cocoa powder, baking powder, and salt.

3. In another bowl, combine the sugar, oil, soy milk, and vanilla.

4. Add the wet ingredients into the bowl with the dry ingredients–using gloves works really well. Form into 2-ounce balls and flatten slightly. Bake 12 minutes and cool completely.
