½ cup|120 grams coconut oilCombine the passionfruit, sugar, lime leaves, and eggs in a medium saucepan over medium-low. Cook, stirring, until thickened, then whisk in the coconut oil. Pass through a fine mesh strainer and place in a jar. Cover and refrigerate until ready to use. Curd will keep, refrigerated, for up to 1 month.
