Turkey Meatloaf

The classic meatloaf gets a bit of a makeover with ground turkey and duck bacon, thanks to this simple dish from Meyhem Lauren.

Ingredients

4 pounds|1.8 kg ground turkey
1/2 cup|70 grams breadcrumbs
1/2 cup|65 grams dried cranberries
1/3 cup|90 grams ketchup
1/3 cup|80 grams spicy brown mustard
2 teaspoons poultry seasoning
1 tablespoons cayenne pepper
5 garlic cloves, finely chopped
3 ribs celery, diced
3 sprigs fresh sage, leaves torn
3 sprigs fresh thyme, finely chopped
2 large eggs
2 medium carrots, diced
2 sprigs rosemary, finely chopped
1 medium yellow onion, diced
8 ounces|227 grams duck bacon

Directions

Heat the oven to 375°F. In a large aluminum tray (about 9-inch-by-13-inch), mix everything except for the duck bacon together. Press into the tray and lay the duck bacon over the top. Bake until the turkey is cooked, about 45 minutes.
