Eggs and potatoes are two of breakfast's most crucial cornerstones, if not the most crucial. But there are times when sunnyside-up jawns with hash browns can feel a little played out.

For those mornings, there are these croquettes—perfectly crispy; seasoned with scallions, mustard, garlic, and pickle juice (secret ingredient); and extra creamy, thanks to a splash of heavy cream.

They're topped with poached eggs and smothered in a gooey Gouda sauce. Break those whites and let the yolks make it gold. Aw, hellllll yeah.
