Get Baked on This Super-Cheesy Baked Eggplant
When Abdullah Saeed visited Colorado for Bong Appetit he was treated to a four-course weed feast courtesy of Jessica Catalano the brains behind the Ganja Kitchen Revolution. Here is the highlight.

At 9,000 feet above sea level, it's safe to say that Saeed had never gotten that high that high before, and it was all thanks to the "cooking oils" prepared by Catalano. The main course and highlight of that meal was a baked Italian eggplant dish that looks old-school, but has a decidedly modern twist that reflects cannabis law reform.
It's gooey, cheesy, and super easy to make. Just don't forget the magic ingredient here, which is the (optional) garnish. This recipe calls for four grams of finely ground Summit Star Flower weed sprinkled on top of your luscious layers of eggplant excellence. Think of it as THC oregano.
