Waffles: they're not just for breakfast anymore.

Total: 1 hour
1 cup plus 2 tablespoons all-purpose flour
1 cup plus 2 tablespoons buckwheat flour
5 teaspoons granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 3/4 cup buttermilk
8 tablespoons unsalted butter, melted
2 large eggs, lightly beaten
7 ounces sour cream
1 tin caviar
freshly ground black pepper
1. In a large bowl, sift the flours, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, butter, and the eggs and stir into the dry ingredients until smooth. Refrigerate the batter for 30 minutes.
2. Heat a waffle maker. Add the batter and cook until golden and crispy. Transfer to a cutting board and cool before cutting into quarters.
3. To serve, transfer waffles to a serving platter and top with a spoonful of sour cream and caviar. Finish with black pepper.
