In today's installment, our staff writer Alex Swerdloff talks about his profile of Zak the Baker, a 30-year-old Miami baker who is bringing artisanal, Old World bread-making techniques to the Florida coast.

After stints as a pot dealer and a wandering farmhand in Europe, Zak started his popular bakery in a friend's garage in suburban Miami four years ago. "I was ready to do my own thing and use all the shit that I learned. I was gung ho," he tells Alex. Zak hustled like crazy, and now, less than five years later, he has 55 employees, and is still expanding his business.
