Apple Pie Sorbet Recipe

Creamy and smooth, this apple-flavored sorbet tastes just like cold apple pie.

Ingredients

1 kilogram matsu apples, cored and cut into 1-inch pieces
50 grams unsalted butter
1 kilogram apple juice
186 grams sugar
9 grams sorbet stabilizer 4 grams citric acid 2 grams xanthum gum

Directions

1. Heat the butter in a medium skillet over medium. Add 700 grams of the apples and cook until tender and soft, about 10 minutes. Set a timer as to not over cook.

2. Transfer the apples and any butter left in the skillet, along with the remaining apples and the juice, to a Vitamix and purée until smooth. Pass mixture through a fine mesh chinois.

3. Add the sugar, stabilizer, citric acid, and xanthum gum to the apple mixture and whisk together. Transfer the mixture back to the Vitamix and blend the entire mixture (in batches) on low speed for 3 minutes, to marry the ingredients, yet not add too much air.

4. Spin the sorbet according to your specific ice cream machine settings.
