Prep time: 15 minutes
Total time: 1 hour

Ingredients

8 tablespoons unsalted butter, plus more for greasing
3/4 cup granulated sugar
1/2 cup light corn syrup
3/4 cup all-purpose flour
3/4 cup chopped pecans
1 teaspoon ground cinnamon

Directions

1. Heat oven to 300°F|150°C. In a large bowl, beat the butter and sugar on medium speed of a hand mixer until light and fluffy. Add in the corn syrup and beat until combined. Add in the flour, pecans, and cinnamon and mix until combined.

2. Line 2 baking sheets with parchment paper and grease with butter. Roll the mixture into 3/4-inch balls and place 4 on each baking sheet, well spaced out (these suckers GROW). Bake until light brown, about 40 minutes. Shape into whatever you like when you remove them from the oven (they'll take on any shape you desire while still warm). Cool completely– they harden as they cool.
