Directions
- Make the spice mix: Place the peppercorns in a spice grinder and pulse until coarsely ground. Mix in the sugar and salt and set the spice mix aside.
- Make the ribs: Heat the oven to 450°F|230°C. Drizzle the ribs with the oil, season with salt, place on a baking sheet, and roast until golden, about 12 minutes. Cover with foil and reduce the oven temperature to 300°F|150°C. Bake the ribs until tender, about 2 ½ to 3 more hours.
- Remove the ribs from the oven and heat the oven to broil. Sprinkle the ribs with the spice mix and drizzle with the honey. Broil until crispy, about 2 more minutes. Cool slightly before digging in.
